Go to Preferences > Peers and limit the number of peers Transmission connects to. I personally limit the global maximum connections to 30, you need to play around with it and find a value that works for you.

I'm not sure if this happens because of this, but here's my opinion:

The way torrents work is that they download the file in small packets. When you start the download, Transmission has a lot of packets to choose from and it can open up a lot of connections and reach maximum downloading speed ...

I'm seeding everything I download. So, each time a torrent would finish downloading, I'd have to move it to a different group. I looked for a script that changes the group when a torrent finishes but couldn't find one.

I noticed that uTorrent finds more peers as well. However, I think Transmission only lists the number of peers that you have a connection going with. If you want to see how many peers Transmission actually found you can go in the Inspector for the torrent you're interested in > Peers tab and look at ...
