Visit the View menu and turn things on.
The top bar has All, Active, Downloading, Seeding, Paused. Click on them. They tell you what torrents are doing what.
Via the Preferences, you can name the various groups, and even create more. Then use them to group your torrents as you will.

hum. I've been playing with both a NAS and a locally attached RAID box. Leeching to a local USB3 drive is running around 80 Mbps. What version Transmission?
"RAM runs out" ... VM shouldn't run out. How much free space do you have on your VM volume?
If you open the Inspector and select only a portion of the files, does the problem still occur?
Who in their left mind created a torrent that absurdly large?

#01: Transmission does normal file i/o. It does not corrupt anything. If you exit Transmission normally then it will have time to write out the last buffers and tell the torrent's trackers that you're exiting normally. If you just kill Transmission then those last buffers are lost - which may later ...

Transmission supports http, https, and udp trackers.
It sounds like the trackers are simply overloaded. Regretfully that happens all too often these days, mostly due to DDoS attacks.
Try adding some trackers to the afflicted torrents.

Most OS' IP stacks don't really support separating DNS. And Transmission itself doesn't have the ability to use a separate DNS (although, this might be an interesting feature to consider). 'Tis the nature of the 'net. Your IP address is known by the addressee. So yes, it's seen in their peer list. It's also seen by the dmca bots, at the tracker.

Require means to only connect if the peer is offering an encrypted connection.
Allow means to accept an encrypted connection, if offered.
Prefer means given a choice, stick with encrypted connections.
