How to delete top level folder

Many torrents are in a folder with the main file and some useless .txt file. If I want to organise this file in my finder to my own liking while keeping the torrent seeding by removing this top level folder, how do I do this?

While I'm here asking a question. Is there a way for transmission to load the index of the torrent first before I add it so I can manually deselect the files that I don't want? When using a magnet link the behaviour doesn't work like this but it does with a torrent file. Now i have to wait until it is initialised, then pause so it doesn't start downloading files and clutter the folder with files I don't want, deselect the files that I don't want, start torrent.
