I'm not sure how to explain this
but it would be handy if when a script was called when a torrent is finished there was a way to export certain variables e.g $torrent $files
then we could do more advance scripting for email notifications and such

The current ones are TR_APP_VERSION, TR_TIME_LOCALTIME, TR_TORRENT_DIR, TR_TORRENT_HASH, TR_TORRENT_ID, TR_TORRENT_NAME, so I have no idea what you imagine would be inside $torrent that is not currently available. How about you explain further what data they would contain and why it would be beneficial, outside of "more advanced scripting".
However, since you get the ID you can fetch that info with transmission-remote, so I don't really see it as that necessary since I don't think that that many will be using them compared to the current ones.

they cover what I wanted, I just couldn't find them in the manual
as the debian wheezy transmission points to http://www.transmissionbt.com/help/gtk/2.5x and gets a 404 error

Well, take the habit of going to http://trac.transmissionbt.com/ for your more generic help needs in regards to Transmission. And for the next time, please make sure it actually is missing before requesting a feature addition, you can always ask in the general or support section.
