I, too, would like this feature. It does seem like a simple yet great feature to have. Most other BT clients have this feature. For example, uTorrent has this under Options->Preferences->BitTorrent->"IP/Hostname to report to tracker:". I know uTorrent runs on Windows. However, I think clients like Azureus (which run on Linux) have this feature, too.
I only ran into Transmission BT because the latest Ubuntu just uses it by default. I like it so far for the most part. Would have to hate to switch to a diff BT client now.

My main use for this is I have my Transmission client and BT Tracker server behind a NAT firewall (on the same sub-net), so Transmission is reporting my internal network IP address instead of the external one. If anyone has a better solution around this (since the feature is not implemented in Transmission yet), much would be appreciated.
